Disk Brakes conversion kit

I've got a really annoying problem on my 64; been living with it for a long time but recently it's become an issue because I'm starting to really do some work on this car to try and make it nice.

The brakes work, I've had others comment on how good they feel and how straight they stop, and they're in perfect condition with new shoes. BUT -- driving around town they have a very funny feel to them. If I push, I get a litle braking, If I push slightly harder, I go through the windshield. I can get used to that, except sometimes the brakes don't release. It may take a couple seconds, or I can tap on the pedal, and they'll release. I DON'T get pulling to one side or the other, they both grab and release at the same time. This is one of those many aspects of this car where I take it for service, again and again, and keep paying for them to not fix it.

Lines and hoses are relatively new, but I don't think these are the issue. Booster has been replaced and rebuilt many times over. My next assumption would be master cylinder.

BUT -- with all this hassle, what about purchasing a disk brake conversion kit? Is this going to solve my problem or create new ones? Anyone on this forum have insight, comments, or experience with these?

The kit supposedly includes new dual master cylinder, rotors, calipers, the whole bit, and unlike the 65 brakes they don't require new wheels to clear the hardware.

When it's time for pads, are they readily available?
