Flat windshield....What's the deal with that?

Just picked up a 61 TBird. Surprised to see it has a completely flat windshield. Most of the others I have seen have typical curved windshield. What is going on here?

Your TBird should typically have a curved windshield, you've got that right. One possibility is that the original windshield might've been replaced with a flat one. Maybe it got busted, or perhaps someone just liked the flat look better.

Could be. I will look again, however, I don't see how that could happen. The trim and molding all seem original.

It's interesting that the trim and molding all seem original. That would typically suggest that the windshield hasn't been replaced. Just to make sure, you could examine the windshield closely for any signs of aftermarket work. Look for unevenness, distortions, or signs of adhesives that could indicate a replacement.
