I am in the process of restoring a 57 t-bird, we are painting the exterior black,
in so doing,and with using a solid white interior, what color should be the dash pad,
bottom of the dash be and what color should the steering wheel be

It sounds like you're trying to duplicate an XK trim code. In that case, the dash pad and the lower dash colors were white. The steering wheel was also white. There is an exception to this however. If you have a trim deviation on a late production car, indicated by a trim prefix "6" on your data plate, one or more of these items might not be white.

Am I better off in replacing the interior with black/white, and painting the dash board
and pad black, I wish to make the car as close as correct as possible, or better stated, if the exterior is black what would be the best interior color, dash, steering wheel colors

In theory (and theory only) you're better off restoring a car to it's original likeness. Early birds that get treated to this luxury are becoming increasingly rare. Less than 10 % of the cars in a recent Regional show were in the original class. Either of the interior options you have identified could be correct.

If you are concerned with restoration of you car to it's original color combinination, please post the information from your data plate on this Forum. We will translate it for you. Then, you will be able to make an informed decision.
At this point, from what you have told us; your exterior color code is "A" and your trim code is "XK". If the data plate indicates any other code, it does not coincide with your plan for the finished product.

If authenticity to the dataplate isn't what you're doing anyways, black with red interior is, in my opinion, the biggest head turner of the bunch.
