My '65 T-Bird appears all original except for the shiny Holley Carburetor. I've noticed in various T-Bird part source catalogs the mention of a Holley Carb. Is this something Ford offered? Or just something that was commonly replaced?

Also by picking through numbers on the carb itself I found a part number '80457-2' that seems to indicate (after rummaging through the Holley web site) to be a Holley Model 4160. Anyone have such an animal on their T-Bird? Does that model number sound right?

The 80457 Holley is a great Carb for the FE series big block, much more tuneable than the OEM carb and better performance. It may need to be tuned to get optimal mileage and performance out of it.

The Holley carb on your car was definitely added sometime later. The stock carb that Ford installed at the factory was an "Autolite 4100". Similar four-barrel setup as the Holley and pretty reliable to boot.
